Chicken Chow Mein

In today's episode of Wok Wednesday, Jeremy teaches us how to cook the UK's favourite Chinese dish: Chicken Chow Mein! This quick and easy dish is sure to impress your friends.



Ingredients
100g Chicken thigh
300g Egg noodles
½ Red pepper
1 Pak choi
2 stalks Kai lan
75g Bean sprouts
2 Spring onions
Marinade
1 tbsp Light soy sauce
2 tsp Sesame oil
½ tsp Sugar
The Sauce
½ tbsp oyster sauce
½ tbsp light soy
½ tbsp Dark Soy
1 tsp sugar
1 tsp Sesame oil
Method
Preparation
Soak the egg noodles in hot water for 3-5 minutes until softened, separated, but still al-dente
Once the noodles have separated, drain the water and allow to dry (place on a clean tea towel to dry)
Slice the chicken thigh and mix with the marinade
Slice the choi sum, pak choi , red pepper and into strips
Finely slice the spring onions and place in a small prep bowl
Mix all the sauce ingredients in a small bowl
Cooking
Heat 1 tbsp vegetable oil in a wok to high heat
Add chicken choi sum, pak choi, red pepper and stir-fry for 1-2 minutes
Add the bean sprouts and stir-fry for a further 30 seconds
Add the noodles and stir-fry for 1 minute
Add the sauce and stir fry for an extra 2 minutes
Add the spring onion and a dash of sesame oil and serve
