Confetti Chili
This recipe comes from our fellow TCW poster @Commenter923:disqus, who left it as a comment on my Chicken 'n' Stuffing post the other day. Looked so good, I asked if I could share it as a separate post, so everyone could take a look, try it and share it.
Tasty, filling, cheap, and freezes well:
Ingredients:
1 lb. gr beef (85/15, no need to drain)1 pkg taco mix
1 pkg Hidden Valley Dressing mix
1 28 oz. can petite diced tomatoes. (or two 14 oz. cans)
1 28 oz. can pinto beans
1 28 oz. can black beans
1 28 oz. can white kernel corn
1 cupped palmful dried chives (optional)
Recipe:
Brown ground beef in a 4 qt. pot. Add taco mix when nearly browned. Add Hidden Valley mix, stir.Open tomatoes, beans, corn, add to pot. Do not drain cans. Add chives.
Stir to mix. Bring to boil and simmer 20-30 minutes.
Serve with chopped onion, shred cheese, and tortilla chips. A side salad, too.

The interesting thing about the recipe is that you can change it to suit -- I've seen it made with tomatoes with chilies, kidney beans, BBQ beans, and hominy - or any mix of them. I always have several bags of this in the freezer for quick meals. I would say this will serve at least 6.
