LENTIL CHICKPEA YELLOW CURRY
INGREDIENTS :
1/2 cup Lentils
1 x can (14 Oz.) chickpeas
2 x cans ( " ") coconut milk
6 Garlic cloves-peeled,chopped
3 Tbsps. Yellow curry paste
1 Onion
Salt,pepper-taste
OPTIONAL ADD -ONS;
Lemon juice
Chopped bell pepper
2 Tbsps. Cashew butter
METHOD
1) Heat large casserole using a bit of Coconut oil or veggie broth for frying onions,garlic.Heat for at least 3 mins.,before adding coconut milk,lentils,yellow curry paste.Cook for only 20 mins. and not longer so as to not overcook and cause ingredients to be mushy. Five mins. before time's up ,add chickpeas.
2 ) Choose optional add-ons customising your curry to your personal taste. Serve warm in bowls.
