½ cup almond flour
1 tsp xanthan gum
½ tsp salt
4 egg yolksIn a bowl, mix the dry ingredients together. In another bowl, beat the eggs. Gradually add the dry ingredients into the eggs. Let thicken for 1-2 minutes. Put on a work surface; add a pinch or 2 of coconut flour or more almond flour. Knead. Roll out, then roll it again. Slice into noodle strips.
Put noodles in hot water and bring to a boil, then drain. You can then fry them or heat them with other sauce ingredients.
