Homemade Chalupas

 

Chalupas, Homemade (Claudia Regaldo)
3 cups flour
1 tsp salt
1 Tbsp baking powder
1½ cup milk
2 tbsp shortening
2 lbs ground beef
1 Roma tomato
½ white onion
1 tsp each : cumin, onion powder, paprika, chili powder, oregano
1½ tsp garlic salt
2 cups vegetable oil

Prepare the dough: in a large bowl combine the all-purpose flour, baking powder, and salt, and give it a quick mix, add the shortening, and start mixing it with your flour, just break down all of the shortening with the flour. Next, slowly add the milk, then start kneading until dough is no longer sticky. Set it in a bowl and let it rest for about 15 minutes, and just make sure you cover. While the dough rests cook the meat.

Brown the Beef: Dice the tomato and onion. In a medium frying pan on medium-high, heat a little bit of oil, and when heated add the tomato and onion, and cook them for about three minutes. After three minutes add the beef, breaking it down a little bit. Add the spices and garlic salt. Mix them in while breaking the meat and mix it with the tomatoes and onions. After four minutes lower the heat medium heat, and cover it and cook for about five more minutes. After the beef is fully cooked, drain all the excess oil.

Roll out the Dough: dust counter top with some extra flour. Divide the dough, forming a little ball, just like your making tortillas. Put them on flour. Dust a rolling pin, and roll them out like your making tortillas. At this point, preheat your oil in a medium frying pan over medium heat. Add about two cups of oil, and heat it.

When the dough is rolled out, making sure it's not too thick or too thin (see video demonstration) wait for oil to heat up and then fry them. Place the dough, pressing it down and cook one side for one minute, then flip it over, pressing down to remove all the bubble. Flip it and fry that side for 45 seconds. After 45 seconds, flip it over and cook the other side for 45 seconds. After the 45 seconds your tacos should be golden. Drain on a kitchen towel paper towel to remove remaining oil, and just continue the process until all of the tacos have been fried.

Serve the chalupas while they're hot, so add meat, lettuce, sour cream, and tomatoes.
