The following contains tips and examples of some Subs.

Tips
1. Bread Choice Matters

1. Bread should be a long roll that's soft, yet chewy, and able to absorb some moisture. If you have a favorite store-bought brand, use it or you can make them at home using the recipe, “How to Make Proper Hoagie Rolls at Home.”

2. Always Lubricate. The sandwich spread should go on both the top and bottom of the bread, but the relishes should be drained of extra moisture.

3. Fat Carries Flavor. Mayonnaise spread and Vinaigrette are listed below. You don't have to go overboard with the vinaigrette—just a few drops can add great flavor.

4. Season your vegetables: Salt your tomato and onion slices.

5. Wrap them in wax paper for the following reasons Even pressure is applied around the Sub, making the texture cohesive and dispersing the flavors. See the technique on the video. Let it sit for a few minutes, then cut the sandwich in half.

Sub Vinaigrette/Dressing
2 parts Olive Oil
1 part Red Wine Vinegar
Oregano
Red Pepper Flakes
Garlic Powder
Black Pepper
Salt

You can use this on shredded lettuce and onion, for example.

Mayonnaise Sauce
¼ cup – ½ cup Mayonnaise
Grated Clove
Garlic
Minced Basil
A little bit of Lime Juice

Use this to coat both sides of the bottom and top of buns.

Meat Combinations that go Together

Italian Sub – place layers in order given
On bottom layer spread a layer of Mayonnaise Sauce
Black Forest Ham
Salami
Pepperoni
Provolone
Lettuce/onion with the Sub Dressing/Vinaigrette
Tomato slices
Mayonnaise Sauce on top bun

Turkey & Pastrami Sub – Place layers in order given
Plain Mayonnaise on bottom layer of bun
Pastrami
Dijon Mustard
Turkey
Provolone
Kettle chips, if using
Shredded lettuce/onion mixture mixed with Sub Dressing/Vinaigrette
Tomato slices, salted
Mayonnaise Sauce on top of bun

Roast Beef/Turkey/Pastrami Sub – Place ingredients in order given
Mayonnaise Sauce on bottom of bun
Roast Beef
Dijon mustard
Turkey
Pastrami
Provolone cheesecake
Shredded Lettuce, or shredded lettuce/onions in Vinaigrette
Any other well-drained relishes like pickles, peperocini, or Calabrian peppers, etc.
Tomato slices, salted
Mayonnaise Sauce on top bun
