BANANAS FOSTER FRENCH TOAST CASSEROLE
INGREDIENTS :
Caramel Syrup
6 Tbsps.Butter
1 cup Brown Sugar
2 Tbsps. Corn Syrup
1 tsp. Vanilla extract
1/4 tsp. Cinnamon
French Toast :
2 medium ripe Bananas (thinly sliced,extra for serving)
Optional -1/4 cup dark Rum
1 loaf Challah bread -or other rich/eggy bread,cut into cubes
8 Eggs
1 1/2 cups milk
2/3 cup Sugar
2 Tbsps, Butter-melted
1 1/2 tsps. Vanilla extract
Pinch salt
Whipped cream-serving
METHOD :
1 ) In small Saucepan,combine Butter, brown sugar,corn Syrup to make Caramel mixture.
Stir mixture, heat until Sugar completely dissolved, mixture starts bubbling, 3-5 mins.
2 ) Stir Vanilla,cinnamon into sugar mixture, pour it into 9 x -inch baking dish. Layer
sliced Banana on top of sugar mixture. Drizzle Rum over Bananas now (if using ) .
3 )Place cubed bread over top of Bananas, in even layer .
4 ) In medium bowl, whisk together eggs, milk,sugar,melted butter,vanilla extract,salt,until
thoroughly beaten.
5 )Pour Egg mixture over bread cubes. Press down on cubes so they emerge more fully in
the egg mixture. Cover with aluminium foil,refrigerate minimum for five hours or ideally
overnight .
6 )When ready for serving, preheat oven 375 F./ 200 C .Remove french toast breakfast
casserole from fridge .Leave casserole on counter while oven heating up.
7 ) Bake french toast covered 45-60 mins. Monitor the baking process ,making sure egg
mixture thoroughly cooked and not runny. Remove aluminium foil cover for last 5-10 mins.
and a crunchy top result .
8 ) Remove from oven, top with additional Caramel syrup, saved sliced banana, whipped cream
9 ) The saucepan can be flipped upside down on plate with caramelised bananas displayed
on top and extras now added.
