TARTA de SANTIAGO (Spanish  St.James)  Cake


INGREDIENTS:


2  2/3 Cups Almonds
4 Large Eggs
1 1/4 cups Sugar
8 Tbsps. /1 stick Butter (room temp.)
 3/4 cup Flour
1/2 tsp.Baking powder
1/2 cup water
Zest of one Lemon



 METHOD

1 ) Blanch almonds,then using a grinder or food processor,grind the almonds until fine,set aside.

2 )Heat oven to 350 F /220 Cels).Grease a  round 8-inch springform pan

3 )In large mixing bowl,beat eggs,sugar together. Add butter,flour,baking powder,water,beat with 
electric hand  mixer ,until well combined.

4 )Stir Almonds into batter.Add lemon zest ,stir until thoroughly mixed.

5 )Pour batter into prepared cake pan.Bake in oven on middle shelf, 40-45 minutes.Check if baked 
through after 45 mins. with toothpick inserted into middle and comes out clean.

6 )Traditional way of decorating this cake is by sprinkling powdered sugar with the St.James cut-out
sword showing .
