If ever there was a time for comfort foods, this is it, and these deliciously chewy, chocolate studded puddles of goodness make the ideal Pesach treat.
They're made with standard pantry ingredients in a matter of minutes. No need for any fancy kitchen equipment...simply stir up and bake!
Ingredients
1 cup powdered sugar
¼ cup cocoa
1/4 to ½ teaspoon salt
1 egg white
1 teaspoon vanilla
½ cup chocolate chips plus extra to garnish
Directions
1: Mix ingredients together to make a thick batter/dough and then spoon small spoonfuls onto GREASED paper with plenty of space between each as they spread a lot.
2: Allow to stand for 20 minutes to set, add a few extra chocolate chips, then sprinkle over a little extra salt on each cookie, and bake at 180 C for 12 minutes.
3: Allow to cool completely before removing from greased paper.
* Greasing the baking paper is essential or they will stick and never come off. Don't over-bake as you want them chewy 'n fudge-like in the middle. Fabulous served with ice-cream to make ice-cream sandwiches. These cookies are sweet but well worth every delicious bite. Great for kids to make themselves too.
