 Must-Try Oven Baked Lemon Chicken

Ingredients

10 - 12 chicken pieces
1 - 2  tablespoons soy sauce
1 teaspoon crushed garlic
2 tablespoons lemon zest (see notes)
1/2 teaspoon each salt and pepper
1/2 cup oil (see notes)
1/2 cup lemon juice
1/2 cup flour
2 teaspoons paprika


Directions

1: Combine soy sauce, garlic, oil, lemon zest and juice together and refrigerate for a minimum of an hour.

2: Pour flour, salt, pepper and paprika into a large bag, add chicken pieces, and shake to coat well.

3: Arrange chicken pieces in a single layer in a dish, brush with a little oil, sprinkle over a little of the remaining flour mix, and bake uncovered at 180 C for 30 minutes.

4: Turn chicken over, pour the refrigerated sauce over, and bake a further 30 minutes or until done.

5: The sauce will have thickened with the flour coating to be thick and especially zesty. Delicious with rice.

COOK'S NOTES: Never leave lemon zest out of a recipe as lemon zest delivers far more lemony flavor than lemon juice which mainly gives you acid. The original recipe called for 1/2 cup of oil but I'm sure you can reduce it. Feel free to add an extra spoon of soy if you like. Olive oil or canola oil will work perfectly. Cook chicken pieces on the bone according to their size as obviously drumsticks cook faster than larger pieces. Enjoy the thick, lemony gravy that is automatically formed.
