Coconut curry salmon
Ingredients:
6 bok choy cut in half
2 pieces of salmon
2 tablespoons green shallots
1 tablespoon ginger
3 tablespoons red curry paste
1 can of coconut milk
Preparation:
1. Preheat the oven at 425F.
2. On parchment paper, on a baking sheet, place your salmon. Drizzle with some oil and season with salt and pepper.
3. Cook in the oven for 6 minutes.
4. Place the bok choy around the salmon. Drizzle with some oil and season with salt and pepper.
5. Cook for another 6 minutes.
Coconut curry sauce
1. In a frying pan, over medium heat, cook the green shallots and ginger for 2 minutes.
2. Add the curry paste and cook for 30 seconds.
3. Add the coconut milk and simmer for 5 minutes.
