Mediterranean Pasta with Zucchini 


INGREDIENTS


1 lb Pasta-Sprirali,Rigatoni or any short Pasta
 Salt
1 Tbsp. Extra-Virgin olive oil
2 x  medium Zucchinis- quartered,sliced 1/2 " thick
2/3 Garlic cloves-minced
15 g./1/3 chopped Sun-dried Tomatoes
80 g. 1/2 cup Kalamata Olives
2 Tbsps. Capers
250 ml./1 cup double heavy cream
50 g./1/2 cup Parmesan cheese-freshly grated
125 ml/ 1/2 cup stock
6 x Basil leaves-sliced
2 x Sprigs Parsley-freshly chopped
3 x Tbsps. sun-dried tomato pesto/paste


METHOD

1 )Put large pot water on stove,bring to boil,add salt,pasta,cook according to instructions.

2 ) While Pasta cooking ,heat olive oil in large pan,cook,seasoned with salt-sliced zucchini until lightly golden brown both sides.Transfer zucchini to separate plate.

3 ) Add minced garlic to pan,sun-dried tomatoes,Kalamata olives,capers,cook quickly over low heat  20-30 seconds.Pour in double heavy cream  ,Parmesan cheese,stock, fresh  basil,parsley,
sun-dried tomato paste or tomato pesto (if using ). Turn up heat ,bring to gentle simmer.

4 )Drain cooked pasta,add directly to pan with sauce,add cooked zucchini,toss until pasta coated with sauce. Taste,add more salt if desired.
