INGREDIENTS
3 Chicken breasts
1 Tbsp. Chicken Bouillon
1 Medium Onion-minced
3 Green onions-white,green parts chopped
2 tsps. Garlic salt
1 tsp. Oregano
1/2 tsp. Chilli powder
1/2 Lime-juiced
1 Tbsp. Cornstarch
2 Tbsps. Tomato paste
4 Ozs. Cream cheese
Salt-taste
Black pepper-taste
5 cups veggie oil-for frying
FOR THE PASTEL DOUGH
3 cups all-purpose flour
1 1/2 tsps. Salt
1/2 tsp. baking powder
2 Tbsps. Lard
1 Egg-beaten
1 Tbsp. Vinegar
Optional : 1 Tbsp. Vodka
METHOD:
1 ) In saucepan, place chicken breasts with bouillon ,cover with water. Bring to boil,simmer 5 mins.
2 ) Turn off heat,let stand covered 10 mins.Remove chicken,set aside,reserving broth.
PREPARE DOUGH
1) In large bowl combine flour,lard,salt,baking powder,vinegar ,egg ,vodka (if using ).
2 ) Mix 1/4 cup reserved chicken broth with 3/4 cup hot water. Gradually add this to water mixture to flour mixture,stirring well.
3 ) Add enough liquid to dough,knead dough gently until smooth, adding more liquid when necessary. The dough should be soft and smooth,but not sticky (add more flour if dough to wet ) Allow to rest 10 mins.
Prepare Chicken Filling :
1) Shred chicken finely,set aside.
2 ) In skillet,heat 2 Tbsps. Veggie oil,saute onions,green onions until soft.
3 ) Add garlic salt,oregano,chilli powder,cornstarch,mix well.
4 ) Add shredded chicken,mix well,adding more chicken broth if mixture seems to dry.
5 ) Remove from heat,stir in cream juice,lime juice until well mixed. Season with salt ,pepper to taste.
Assemble the Pasteis :
1 ) Divide dough in half,roll out one half thinly on floured surface. Fold in half once,roll it out again,let rest 5 mins. The thinner dough rolled out the better.
2) Using pizza cutter, cut dough in half,lengthwise,then cut each piece vertically into 5 pieces making 10 rectangles of dough. The actual size doesn't really matter.
3 ) Place 1-2 Tbsps. chicken mixture on top rectangle dough.
4 ) Dip finger in water,moisten edges of rectangle.
5 ) Press edges of rectangles together, then pinch together with fork,all way around.Repeat with remaining rectangles,then roll out other half dough,repeat.
6 ) Heat 2-3 inches oil in heavy saucepan/deep fryer to 360 F. (200 Cels.) Fry pasteles in batches until golden brown. Drain on paper towels ,serve warm.
