Recipes - Crockpot Sweet & Sour Meatballs

CROCKPOT SWEET & SOUR MEATBALLS

INGREDIENTS :

1 Lb ground  Beef ( 85 % )
1 Egg-slightly beaten
1 Tbsp. Cornstarch
1/4 tsp.Salt
1/4 tsp. Pepper
2  tsps. Soy sauce-low sodium
2 Tbsps. fine bread crumbs/corn-flake crumbs
2     "       Onion -grated/finely minced
1 Tbsp. Cooking oil


For Sauce:


3 Tbsps, Vinegar
3       "      Cornstarch
1/2 cup Sugar
1 Tbsp. Soy sauce-low sodium
1 large Sweet Bell Pepper-cut into 1-inch pieces
1 Can Pineapple -chunks (15 Ozs.)
4 cups hot cooked Rice


 METHOD

1 ) In large bowl,combine ground beef with beaten Egg,1 Tbsp.Cornstarch,Salt,Pepper, 2 tsps. Soy sauce,bread crumbs ,minced onion. Shape into 1 1/2 -inch meatballs.

2 ) In large skillet over medium heat,lightly brown meatballs in veggie oil. Drain well.The 
meatballs can also be baked in a foil-lined rimmed baking  pan in 350 F. oven for 15-20 mins.

3 )Transfer browned meatballs to slow-cooker.

4 )In small bowl,combine Vinegar,Cornstarch,Sugar,1 Tbsp. soy sauce, bell pepper ; stir to blend. Pour over Meatballs.

5 ) Cover,cook on low 5-7 hours.

6 ) In last 30  mins.of cooking, stir in Pineapple with juice. If thicker juice desired,combine more cornstarch with some cold water added, stirring,until thickened.

7 ) Serve meatballs with hot cooked Rice or Noodles.

COOK TIME-6 hours
TOTAL TIME -6 hrs. 20 mins.
