Flourless Lemon & Almond Lace Cookies
1 ½ cups ground almonds
¾ cup powdered sugar
1 tablespoon lemon zest
Pinch to ½ teaspoon salt (Maldon is always my first choice)
1 egg, whisked
Powdered sugar to coat
1: Mix the almonds, sugar, zest and salt together then stir in the egg and mix to make a dough.
2: Refrigerate for 20 minutes then roll into small balls, roll each ball in powdered sugar, and bake at 180 C for approximately 15 minutes till lightly golden and powdered sugar is lacy.
* Recipe makes approximately 20 and can be easily doubled.
Flourless Chocolate Fudge Puddles
1 cup powdered sugar
¼ cup cocoa
1/4 to ½ teaspoon salt
1 egg white
1 teaspoon vanilla
½ cup chocolate chips plus extra to garnish
Maldon salt to garnish (optional but amazing)
1: Mix ingredients together to make a thick batter/dough and then spoon small spoonfuls onto GREASED paper with plenty of space between each as they spread a lot.
2: Allow to stand for 20 minutes, add a few extra chocolate chips, then sprinkle over a tiny bit of Maldon on each cookie, and bake at 180 C for 12 minutes.
3: Allow to cool completely before removing from greased paper.
* Don't over-bake as you want them chewy 'n fudge-like in the middle. Fabulous served with ice-cream to make ice-cream sandwiches.
