Cheesy Hushpuppies (Stove Top Kisses)
2 boxes jiffy mix ( or sweet corn bread mix equal to oz of two jiffy mix)
1/2 cup self rising flour
8 oz softened cream cheese
2 Tbsp cajun seasoning
5 Tbsp green onions chopped or desired amount
1½ cups mozzarella cheese
2 cups sharp cheddar cheese ( you can use more or less)
2 cups buttermilk ( you can use whole milk if you want )
6 cups vegetable or canola oil*
In a large bowl, mix together the Jiffy mix and flour, then add remaining ingredients in the order given, except the vegetable oil. Batter will be thick and it should look like a biscuit dough. Form into hushpuppies . You can use an ice cream scoop and drop the batter in the oil to fry. Fry 6-7 hushpuppies at a time for about 2-3 minutes, or until golden brown. Use a spoon to swish them around as they fry. Drain on paper towels or a rack.
*You may need more or less oil depending on the size of the pot or deep fryer.. just be sure to fill it halfway with oil and preheat. If you are using a deep fryer preheat to 375 if cooking in a deep frying pot .. preheat oil over medium heat for 5-6 minutes...keep in mind If the oil is too high it will cook the outside of the batter but not the inside.
Once the oil starts to look translucent it's ready to fry. To test the oil before frying, simply drop a tsp of batter into the oil.. if it sizzles its ready! Please do not overcook the batter.. if you do the hushpuppies will be a bot tough and dry.
Hot Sauce Ranch:
1 cup ranch dressing
3 tbs hot sauce
1 tsp cajun seasoning
