Wow The Crowds Roast Sweet Potato Salad

Ingredients
3 large sweet potatoes, peeled and cubed
1 cup chopped spring onions
1 large red pepper, cubed
1/2 cup pine nuts OR almond matchsticks, toasted
1 bag mixed lettuce/rocket
For the dressing
1/2 cup canola oil
1/3 cup red wine vinegar
3 tablespoons sugar
1 tablespoon chutney*
1 1/2 teaspoons salt
1 teaspoon ground cumin
1 teaspoon curry powder
1 teaspoon cinnamon
Grinding black pepper
* Apricot or peach jam can replace chutney if absolutely necessary. Find Mrs Balls Chutney currently on sale at Meatland or try Meatland's own brand of chutney.
Directions
1: Shake dressing ingredients together till well blended.
2: Drizzle the sweet potato cubes with olive oil and season with salt and pepper.
3: Cook at 180 C till soft and just slightly brown at the edges.
4: Combine salad greens with spring onions and red peppers.
5: Top with sweet potato cubes and toasted nuts and dress just before serving.
COOK'S NOTES: This salad is ideal for entertaining as roast potato and dressing can be prepared days in advance as can the toasted nuts. Spring onion and red pepper can be chopped up to 24 hours in advance and refrigerated separately and then all that's left to do is assemble the components on a large, flat platter. Don't be scared off by curry powder, cumin and chutney as it's this slight spiciness that makes the salad special. Chutney is an essential ingredient in the kitchen always and contributes to a wonderful marinade for chicken and brisket too.
