Chicken & Avocado Soup 

INGREDIENTS :

1 Tbsp. veggie oil
1 small Onion-chopped
3 Garlic cloves-peeled,chopped
6 cups Chicken broth-homemade or store bought
1 Tbsp.dried Oregano
3 chicken breasts-boneless,skinless
Salt-taste
1/4 cup Cilantro leaves-bunched
3 medium Tomatoes 
2 medium  Avos.
Optional-lime halves


METHOD :

1 ) Heat veggie oil in large saucepan.Saute onions,garlic 1 minute.

2 ) Carefully add veggie broth,oregano, chicken

3 ) Bring to boil,then turn down heat,simmer 1 hour.

4 ) Remove chicken from  pot,shred it using two forks.

5 ) Return shredded chicken to pot,add salt.

6 ) Chop Cilantro,tomato,Avo.to soup.Let sit 10 mins. before serving.

7 ) Serve with lime halves ,if desired, to squeeze into soup.
