Instant Pot sweet and spicy meatballs


Meatballs made in an Instant Pot means you can enjoy this savory meal in half the time.
  • YIELD: SERVES 4
  • PREP TIME: 10 MINUTES
  • COOK TIME: 45 MINUTES
This fabulously easy dish is adapted from the winning recipe in a national cooking competition of home cooks trying to come up with the easiest and most delicious meatballs. I tried it in the oven first, and then in the Instant Pot, and it came out equally delicious and saucy in both, with the Instant Pot cutting the cooking time nearly in half.

We tend to like the meatballs really well done, but if you are good with medium well-done, you can certainly try an even shorter setting on the Instant Pot. One suggestion – consider doubling up on this recipe. These lasted no more than 15 minutes after the timer beep, and came nowhere near the dinner I planned to serve them at. It’s back to the pot for me!

INGREDIENTS

  • 1 pound ground beef or turkey (or half of each)
  • 1/4 cup bread crumbs
  • 1 egg
  • 2 tablespoons water
  • 2 tablespoons ketchup
  • Salt and pepper, to taste
  • 1 cup marinara
  • 1 cup spicy duck sauce

DIRECTIONS

Mix chopped meat thoroughly with bread crumbs, egg, water, ketchup, salt and pepper. Shape into balls and place in bottom of instant pot.
Mix together marinara and duck sauce and pour over meatballs.
Set vent to sealing, and turn pot to meat/stew.
When timer rings (it should be 40-45 minutes), meatballs are ready to go in a savory sauce.
Serve over spaghetti or rice. Here is a kitchen-tested recipe for rice in an Instant Pot.
