Giant Lemon-Ginger Cookies

GLUTEN-FREE GIANT LEMON/GINGER COOKIES

INGREDIENTS


12 Tbsps. unsalted Butter-room Temp.
1 1/2 cups Sugar
1 large Egg
1 tsp.Lemon extract
2 cups Gluten-free all purpose flour-with xantham/guam gum mixture
1/2 tsp.Gluten-free baking powder
1 tsp.Ginger
1/4 tsp.salt
1 Tbsp. Lemon zest
2 Ozs. crystallised ginger-minced


METHOD:

1 )Preheat oven to 375 F. /190 Cels.

2 ) Combine softened butter and sugar in mixing bowl.Cream with electric mixer until light,fluffy,approx.3 mins.Add egg,lemon extract.Beat until combined.

3) In separate bowl combine gluten-free all purpose flour,gluten-free baking powder,ground ginger,salt,grated lemon-zest.Whisk to thoroughly combine.

4 ) Add dry ingredients wet ones.Beat on slow using spatula to scrape down sides of mixing bowl. 
When mixture combined,gradually add minced ginger to cookie dough,blend until combined.

5 )Make 2 Tbsps. ball out of dough for the giant cookies.Place no more than 6 on large ungreased
cookie sheets.If placed too close together,will be cooked so.For smaller cookies use 1 Tbsp. of dough.

6 )Bake in preheated oven 10-12 mins. or until cookies set and edges golden brown.Allow to cool on cookie sheet at least 5 mins.before removing with spatula to cooling rack.

7 )Always ensure working surfaces,material,utensils,pan etc. are properly gluten-free when cooking so.
